Foods & Nutrition Recipe Review!

For my first semester of my freshman year, I was enrolled in a class entitled FOODS & NUTRITIONS, which was taught my Mrs. Stahr. At first I was really intimidated by my teachers and my classmates; but by the end of the semester, it was by far my favorite class!  I highly encourage any student to take a cooking class if they are presented with the opportunity to! Following this introduction is a recipe for my favorite recipe my partner and I made; coffee cake muffins. 

Coffee Cake Muffins – (original recipe from the website, “BrooklynFarmGirl”)

Prep Time: 10 minutes – Cook Time: 15 minutes- Total Time:  25 minutes

Ingredients:

  • 1 cup flour
  • 1/3 cup sugar
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/4 cup butter melted
  • 1 egg
  • 1/3 cup milk
  • 1 teaspoon vanilla

Strudel:

  • 2 tablespoons flour
  • 1/3 cup sugar
  • 1/2 teaspoon cinnamon
  • 2 tablespoons butter melted

 

Instructions:

  1. Preheat oven to 350 degrees.
  2. Spray a mini muffin pan with nonstick spray (or line 8 regular size muffin pans).
  3. For the muffins: In a large bowl combine flour, sugar, baking powder and salt. Add in melted butter and mix with fork so the mixture is crumbly. Add egg, milk and vanilla. Continue mixing with a fork so everything is combined. Pour this mixture into the mini muffin pan – it should fill up approximately 16 muffins.
  4. For the streusel topping: In a small bowl combine flour, sugar and cinnamon. Cut in  butter and mix with fork so the mixture is crumbly. Sprinkle this mixture on top of the muffins. Keep sprinkling until it’s all gone.

  5. Bake for 14-15 minutes.
  6. Let cool for 10 minutes before removing muffins from pan.

 

Additional Comments:

  • The original  recipe called for melted butter- but for best results cut in cold butter, for best results.
  • Make sure not to overmix your batter- this will lead to some tough muffins!

 

Review: I give this recipe a 9.5/10 stars! The only complaint I have was that the muffins  strudel sank to the bottom of the muffins- but they still tasted great!
